Hi Sean a few more that come to my mind:
1. Keil www.keil.com/boards/ has great eval boards packaged with their
compiler eval version. 
2. Olimex has much more to offer than just the LPC2148 board (although
I like that one best from them). 
3. www.ashling.com offers boards for LPC2106 and adapters for other
LPC2000
4. www.nohau.com offers a board for the LPC2106
5. The ARM patch www.thearmpatch.com/lpc-sbc2.html
6. A couple LPC2000 devices soldered on a DIP40 / DIP50 can be found
here: www.tinyarm.com/
7. Last but not least www.phytec.com for the LPC2294

For the LPC2000 family there is a comprehensive list of tools
including boards on the Philips website:

http://www.semiconductors.philips.com/products/microcontrollers/support/development_tools/tools_by_family/arm7tdmi/index.html

So, there is a list that is naturally biased on the Philips website.
