I have a small LPC2119 board I have just built and would like to
interface a small LCD display to it. I have seen the Nokia 3310
referenced. This seems to be a good display to use because it has a
built in controller and serial interface.

The only problem is that all the sites I have found that sell them are
in Europe. Does anyone have any suggestions for places in the US that
sell Nokia 3310 displays or something similar. I checked Earth LCD and
they did not have anything.

Try www.crystalfontz.com <http://www.crystalfontz.com/>  . they have
relatively good displays . I've used some of them (128x64 mono with TS and
BL). they seem to be quick and reliable. Also try looking at some Epson
screens..

I've got a couple of 5110 displays, but haven't tried them yet. I was
intending to interface one to the '2106. I need to make a small PCB so I can
make the connections to it.

http://www.jelu.se/shop/ will probably supply you with a 3110 display.

Another company to try is www.optrex.com. They have a bunch of screens, 
some of the small ones (128x64) are nice as they can be interfaced over 
serial or memory bus (they have a built in epson controller) and have 
led backlighting. They are available in the US.

When I was looking for one, I gave up trying to find a stateside suppliers
and I went with a place called Profacia in the UK.  They ship to the US
and take paypal, so it really wasn't a big issue.  You might try them out.
