.BIN implies a raw, unadorned stream of byte values; no
headers, checksums or other formatting. The fact that it is
32768 bytes long means it fits exactly into a
15-bit-wide/256kbit EPROM chip (via an EPROM programmer).

Putting it in a .zip file means that you can test the
integrity of the file (since the .zip format contains a
checksum) to make sure there aren't any errors.
Note that I haven't tested this data (i.e. burned it back
into a chip and tried it in my Prophet 2002+) so I can't
make any promises that it'll work.
If anyone is brave enough to try this firmware in their
2002, can they please let us know how it goes... ;)
