A lot of people "tinker" because they have a very specific artistic goal in mind and are striving to achieve it. The technology and the need to "tinker" is a barrier. Other people "tinker" with various things because "tinkering" is fun. Some do both. If Epson or Canon or whoever did come out with a good B&W solution many, many people would simply put it to use making the prints the want and never look back.
