The idea is you play the chanter as you would the real chanter with the grace notes, trills, etc with your right hand as you hold down the drones key with your left hand on your keyboard. It's not perfect as the nuances of the instrument are many. I've never been enchanted by even the best real, live solo bagpipe. It seems to me to be an instrument that sounds best in a group, e.g. a Scottish Highlands bagpipe troupe. I've found you can improve the sound of a sampled BP by adding a bit of oboe to the chanter line, and a square wave analog synth patch to the drones - not 100% organic, but works pretty well in a track.
