It is possible that in moving the file, the Mac saw it as a text document and "corrupted" the file with the CRLF's becoming CR's. There aren't any natural CRLF's in an EXS file, though,although a 13 and 10 may occur accidentally. This likely isn't it, although it's one of many guesses. Really, the only requirements for the Instrument file to show up in the menu is that it either 1) had a FileType of '.exs' or in the name has an suffix extension of ".exs" (without the quotes) - and the file should be legitimate - I do think EXS does a cursory check first, but the extent of that I don't know.
