Two things to check:

Check that you haven't got patch selection set up to activate
from MIDI messages (when certain MIDI events, like the sustain
pedal will change the EXS patch)

Check that you don't have more than one instrument with the same
name in different places. In this case, the EXS can reload the
first matching instrument file found, rather than the actual one
used.

Also check your key commands for next/previous plugin setting. You could 
be inadvertantly hitting this one as well which would cause the EXS to 
change patches if you have some presets saved as plugin settings.
