With the EXS MkII it doesn't necessarily have to be expression. The EXS now
has relative volume somewhat "hardwired" to CC11 (unfortunately without any
reset button, but then that's quite another story), but as soon as you use
it as a modulation target, that internal wiring will become invalid.
So, you could just enter *any* controller (whatever is possible via your
breath control) in the source field, select "relative volume" as a target
and define how much it should affect the patch using the slider.
I think that this should result in the most realistic feel (plus, you are of
course keeping your CC7 for overall volume control).
I wouldn't use a transformer, btw. The above mentioned scenario requires two
hold-selection-clicks and one fader draw and it will allow you to easily
tweak the amount of the effect on a per patch/song base. In addition,
perhaps you'd like to control a bit of filter cutoff or attack or whatever
as well. Would just work the same.

You're prefectly right of course.  Sorry for my previous suggestion 
which didn't really make sense.  Old habits die hard, etc.
