I was once (1987?) taught to program a DX7, and I realised that it's very mathematical. You sort of program how you want the sound to develop, as opposed to substractive synthesis where you would have a basic sound and then shape it with modifiers. I have yet to get into CZ/VZ progamming, but the CZ just sounded naff to me, however the VZ is excellent, and certainly on a par with DX sounds. As for layering, I'm currently layering VZ piano sounds with pads on my OB-12 - I find the VZ and a VA work very well together.
