What George says is quite on the spot. To record properly a sequencer is much better than the inner recording of the disklaviers (which are limited for editing but can be also very useful no fuss recording on the fly). Otherwise I personally use as sequencer Digital Performer and Cubase, for a start Cubase LE is a good idea its quite simple and straightforward as well as not expensive (and if you can find bundled with something else that is useful why not !)
And I use a "player" as jukebox to play all my midi files (many are stored on my disklavier but the best is to have the instrument connected to your computer/ laptop etc and send the files from there i feel). The one for me is Qmidi with its playlists and controls.
*For extra live controls I add to it the small application "Midi Patchbay" which permits configurations like sending all midi data to channel 1 etc..... An alternative more sophisticated is the MidiPipe software. Another one quite good but which is not anymore in the app store is "Midi-Connections".
Finally for using along the piano track some instrumental tracks I use now "DLS-MIDI-SYNTH" an application that sends midi tracks to the sound founts audio of your mac, you can find quite good sound fonts on the web and make your choice in the application between them to choose the one that fits your tastes. (This I use in conjonction with Qmidi which sends the midi data and from there the piano part for the disklavier is routed out to the midi out port that plugs into the disklavier.
But all those things take time to install , test an use... You must have a bit of ease with the tools hardware, software etc so in a way if you can find a tech or geek in your area that knows it all and that you can pay for a couple hours of consulting why not ? You could get very fine advices and most of all personalised ... not a bad idea at all
Good luck anyway , there is really much of fun to have with the disklavier for creation and for the magic of music listening, I am a professional musician and I discover new repertoire (classical) everyday... (one has to develop a good ear to find the good sequences on the very vast amount of files available on the net, the bestir solo piano are the ones played/recorded live by a real pianists.
